First floor drinks

The Cocktail Bar sits at the heart of Hawke & Hunter and it pulses with energy – literally. The room is dominated by a large central island, every surface of which is lit from within to give the space a permanent glow; it’s a stage for some of the most innovative and exciting cocktails around. Resident and guest DJs keep things moving with contemporary sounds but there’s also a Snug, available for hire, that provides a candle-lit, intimate space just off Edinburgh’s most buzzing cocktail bar.

The Cocktail Bar caters for every taste – from classic Martinis, Margaritas, Cosmopolitans and Daiquiris, to our Hawke-Tails and Hunter Blends, two unique ranges of drinks that reflect our seriously playful approach to the art of the cocktail. All of the drinks on our Hawke-Tails list are elegant and sophisticated, as good cocktails should be, with the Lady Hawke (a combination of Pampero Anejo Especial rum, fresh strawberries, Briottet Liqueur de Coquelicot de Nemours (poppy), sugar syrup and Veuve Clicquot champagne) proving particularly popular. The Hunter Blends are, as the name suggests, for those in need of a refreshing and thirst-quenching drink after a day on the hunt – try The Chase (Pampero Anejo Especial rum, Drambuie, passion fruit syrup, fresh lemon juice, sugar syrup, Angostura bitters and pasteurised egg white) for a tangy kick after a day in the saddle.

Cocktails come from America and were particularly popular during Prohibition. No one knows why they are called cocktails – but we certainly know how to make them.
